Reduce the guarantee figure by 8 or 10 percent. You’ll save money. You won’t have to pay for food that “goes begging.”  If everyone does happen to show, there’s no harm done. The hotel will be prepared to serve 10 percent more than the number guaranteed. This also is standard procedure.
